Ingredients
  

For the Sweet Potatoes

  • 1 1/2 lb sweet potatoes peeled and cut into 3/4-inch cubes
  • 1 tbsp olive oil
  • 1/2 tsp kosher salt
  • 1/2 tsp smoked paprika

For the Beef

  • 1 1/4 lb 93/7 lean ground beef
  • 1 tsp olive oil
  • 2 tsp ground cumin
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1/2 tsp chili powder
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper

For Serving

  • 2 cups 2% small-curd cottage cheese served cold
  • 4 tsp hot honey
  • 2 tbsp fresh chives finely sliced

Instructions
 

Cook the Sweet Potatoes

  • Preheat the air fryer to 400°F. Toss the sweet potato cubes with 1 tablespoon olive oil, 1/2 teaspoon kosher salt, and 1/2 teaspoon smoked paprika. Arrange them in one layer, working in batches if needed. Air-fry for 14 to 18 minutes, shaking halfway through, until the edges are browned and the center yields easily to a fork.

Cook the Beef

  • Heat 1 teaspoon olive oil in a 12-inch skillet over medium-high heat. Add the ground beef and leave it undisturbed briefly before breaking it into small crumbles. When browned in spots, add cumin, garlic powder, smoked paprika, chili powder, 1/2 teaspoon kosher salt, and black pepper. Cook until no pink remains and an instant-read thermometer reads 160°F in the center of the beef.

Assemble and Serve

  • Divide the crisp sweet potatoes and seasoned beef among four bowls. Keep the base hot while you finish the bowls.

  • Spoon 1/2 cup cold cottage cheese onto each bowl. Drizzle each portion with 1 teaspoon hot honey and finish with chives. Serve immediately so the hot base and cold creamy topping stay distinct.
